This year, we are very fortunate to be partaking in the Master Of The Trade Routed Challenge.
We have recreated our signature seafood dish, Miso-marinated Kingklip, which is an interesting play on different cooking techniques, styles and flavours.
The Kingklip, soft, flaky and fresh, is served with red miso paste and matafam potatoes that we bake, remove the skin and cook them again with some caramelised onions and herbs for the taste and texture so many have come to love. The dish is then finished off with a ginger, garlic, coriander and lemongrass gastrique.
